Betsy served as a substitute teacher of Spanish helping the young children learn a foreign language. Betsy also was a licensed cosmetologist and enjoyed years of cutting, styling and fixing hair for women and men, family and friends.
Betsy traveled to Spain and Venezuela visiting her relatives. Betsy lived a special life and spent much time caring for others in need. Family gatherings usually centered around Betsy and her love of cooking and being with her family. She spent countless hours of her time lending her talents to the Islenos Festival where she earned the honor of Gumbo Champion of St. Bernard Parish. Betsy spent most of her time cooking and preparing food for the performers who came from the Canary Islands. Betsy served as the matriarch of her family and most holidays were spent at her house for all to gather together and share social activities and various recipes from family members.
Betsy always gave so generously to others and to her heritage here in St. Bernard. The Islenos Festival will truly miss her warmth, her welcome, and her great cooking.
Special thanks to one of her God children, Melanie Guerra Martinez who stayed and cared for Betsy in her last few weeks of life.
