Anna "Penny" Elizabeth Allen Carroll's Obituary
Anna “Penny” Elizabeth Allen Carroll, 78, of Covington, Louisiana passed away on Thursday, February 19, 2026. She was a devoted wife to her husband of 57 years; a cherished “Mimi” to her seven grandchildren; and a celebrated teacher to students in the Mandeville area.
Born on December 21, 1947, in Toledo, Ohio, she graduated from Maumee High School in Maumee, Ohio, and the University of Toledo, where she received a teaching degree. There, she met Andrew “Andy” Carroll, and the college sweethearts married in 1969. Throughout her life, she showed a kind and loving devotion to her husband, her steadfast companion from the time they met on the college campus until her last moment.
The couple moved to the Covington area in 1985, following Andy’s career. Penny taught at various schools throughout western St. Tammany, but spent the majority of her career at Pontchartrain Elementary School in Mandeville. She began teaching at Pontchartrain in 1994 when it first opened, and remained there until her retirement in 2014.
She touched the lives of thousands of second and third graders there, and the school named her as their Teacher of the Year for the 2004-2005 school year.
Penny treasured her family and friends and was happiest when surrounded by those she loved, especially her husband, children and grandchildren. She loved gardening at her Covington home, and in her retirement, she regularly attended Bible studies and took up the game of Mahjong. Her gentle spirit and beautiful smile will be deeply missed by all who knew and loved her.
She is survived by her loving husband, Andrew Carroll of Covington; children, Bridget Boudreaux (Tommy) of Mandeville and John Carroll (Jenny) of Kingwood, TX.; grandchildren, Jacques, Zoe, and Gabrielle Boudreaux, and Jacob, Connor, Evan, and Callie Carroll.
She was preceded in death by her parents, Anna “Skip” Allen and Lee C. Allen; and sister, Vicky A. Kerr.

Relatives and friends are invited to attend the funeral services on Friday, March 13, 2026, at 12:00 PM at Most Holy Trinity Catholic Church, Covington, Louisiana, with visitation beginning at 10:30 AM. Interment will follow in St. Lazarus of Bethany Memorial Garden.
